Okay so before anyone freaks out, I know that this isn’t a traditional teppanyaki recipe! Usually this Japanese style of cooking is done on a griddle, served with heavy sauces and you are usually one of two sake bombs into your evening when the food arrives! My version is a teppanyaki chicken quinoa bowl. Very similar flavors cooked in a wok with simple ingredients. The sauce is home made, and the veggies and chicken are cooked with lots of fresh garlic and ginger. Add in a gluten free teriyaki sauce with a bit of sesame oil and you have one full flavored dish that is healthy and full of protein. If you have a griddle in your home, then please use it though. I won’t hold you back! And you had better send me videos of you flipping tongs behind your back!
This is usually one of the go to dishes I will have when I am in a mall. I love the smell of teppanyaki chicken coming from the food court. The only problem is I usually feel like crap afterwards. It’s all of those heavy sauces and starchy noodles that can leave you feeling like a nap after eating. Don’t get me wrong, I love me some teppanyaki, but Sometimes it’s nice to have something a bit lighter and healthier.
Enter in my teppanyaki chicken quinoa bowl! My sauce is home made and doesn’t use many ingredients. Instead of the starchy noodles, I used a bed of tasty quinoa, which is full of all sorts of vitamins, minerals, and protein! I also used vegetables that are pretty traditional in the teppanyaki we eat here in North America. Mushrooms, cabbage, broccoli and carrots are the perfect veggies to use for this quinoa bowl. I also used some tasty pea shoots that I received from my friends at MicroAcres. This dish is seriously delicious!
If you aren’t fortunate to have a griddle in your house (one day!) then a wok is going to be your best friend here. The key to making sure this turns out well is not filling the wok too full and using hot oil. Treat this pan like you would a hot griddle and your chicken and veggies will be well caramelized and full of flavor.
For the sauce I kept it simple and used honey, tamari or gluten free soy sauce, sesame oil, garlic and ginger. Simple ingredients that make a light teriyaki style sauce with still all of the flavor of your store bought, brands.
- 3 cups cooked quinoa (follow directions on package)
- 1 lb. chicken breasts, sliced thinly
- 2 cups sliced brown mushrooms
- 2 cups broccoli florettes
- 2 cups shredded cabbage for garnish
- 1 cup shredded carrots for garnish
- 1 cup pea shoots for garnish
- 3 cloves garlic thinly sliced
- 1 tsp fresh grated ginger
- vegetable oil for cooking
- salt and pepper to taste
- 1/4 cup tamari or gluten free soy sauce
- 4 tbsp liquid honey
- 1/2 tsp sesame oil

Cook the quinoa according to the directions on the box. Keep warm

heat up some vegetable oil in a large wok until almost smoking. Add in the chicken, mushrooms, broccoli garlic and ginger and saute on high heat until the chicken is 90% cooked and the veggies are well caramelized. You may want to cook the quinoa bowls in w batches as adding ingredients for 4 people in a wok may fill it too full and not add as much color to the veggies and meat!

Add in the honey and caramelize even further. Add in the soy sauce and sesame oil and cook for just a few seconds. Let the sauce thicken a bit but don't over reduce the soy or you will regret it!

Serve on a bed of quinoa and garnish with the carrots, cabbage, and pea shoots. Enjoy!

I’ve never tasted this dish before! You make it sound wonderful, but I don’t like the sleepy I’ve had too much to eat feeling. Your version is the one I’d one to try. I guess I’ll have to make it myself. YUM!! And as far as tongs go? I couldn’t flip them around if my life depended on it.
