As mentioned in my last post, the weather in Alberta has been pretty crappy! As much as I want to break out the fresh salads, and spring vegetable dishes, I feel like we are still a little ways away. Fortunately I came up with this quick and easy recipe for a spicy pulled pork that went perfectly with my fresh roasted vegetable salsa.
I figured it was my way of incorporating something meant for the winter, with just a hope of spring and summer. We can all dream right?
The pulled pork was simple to make as it just took broiling the pork shoulder with some spices to develop flavour, and braise it in a nice tomato, molasses based sauce. Just pull the meat and reduce some sauce and you have a tasty source of protein that can go on rice, or served with roasted veggies. Big win!
- 2 lbs pork shoulder
- 2 tbsp chili powder
- 2 tbsp garlic powder
- 2 tbsp smoked paprika
- salt and pepper to taste
- 2 tbsp olive oil
- Sauce
- 1 liter of chicken stock
- 2 cups of crushed tomatoes
- 1/4 cup molasses
- 3 chipotle peppers, finely chopped
- Cut the pork shoulder into 1 lb chunks and season well with the spices, salt and pepper.
- Heat up a large pan and add the olive oil. Once the oil just starts to smoke add in the meat and sear on all sides until well caramelized.
- Add to your slow cooker and add in all of the liquid ingredients, with the chopped chipotle peppers
- braise for 3 hours, or until the meat starts to break apart and can be shredded.
- Separate the meat from the liquid and shred. Add back to the large pan.
- Add enough sauce from the slow cooker to just cover the meat. Reduce until the meat is well covered. Serve with roasted yams, fresh salsa, and rice for a healthy protein bowl!
