I had a hankering for fajitas and wanted to whip up something simple and easy. These one pan shrimp fajitas are well seasoned, and broiled in just 10 minutes! Your weeknight dinner could not be any simpler!
I just wanted to start this post with giving my beautiful wife Heather all of the props for coming up with this recipe. It was one of those classic “what do you want for dinner” moments during a week night. One pan shrimp fajitas to the rescue! It’s one of those perfect meals. Tasty tortillas filled with smokey chipotle garlic shrimp, peppers and onions, topped off with a home made avocado sour cream sauce, salsa and cheese! Thanks for the idea babe!
The key to making these one pan shrimp fajitas is to make sure that you don’t overcook the shrimp! Shrimp can easily be overcooked and turn rubbery. The pan should only be in the oven for max 8-10 minutes and even then it should be mixed once or twice during the cooking process to make sure everything cooks evenly!
The flavors are nice and simple too! All you need is some chili powder, chipotle powder, and garlic powder, some salt and pepper, and you’re in business.
To make the avocado sour cream, all you need to do is blend a ripe avocado with some full fat sour cream, add in a touch of that delicious chipotle chili powder for some smokiness, lime juice, salt and pepper. What’s nice about this recipe too is you could substitute the tortillas with anything from roasted sweet potatoes, to quinoa for a healthier option!
On a side note, these one pan shrimp fajitas are perfect for making large batches of meals for meal prep through out the week. Please, please, please, do not microwave the left over fajitas. Seafood, especially shrimp should never be microwaved. That smell will never come out of your microwave…..You have been warned! The best way to reheat the fajita mix is to add it to a pan with a bit of water and steam it until it’s hot. This will ensure the shrimp doesn’t get totally overcooked.
- 1 lb shrimp, peeled, de-veined
- 1 red pepper sliced
- 1 green pepper sliced
- 1 yellow pepper sliced
- 1 orange pepper sliced
- 1 red onion sliced
- 1 tsp chipotle powder
- 2 tsp chili powder
- 2 tsp garlic powder
- 3 tbsp olive oil
- salt and pepper to taste
- 1 avocado ripe,peeled and chopped
- 1 cup full fat sour cream
- 1/2 tsp chipotle chili powder
- juice of 1 lime
- salt and pepper to taste

Mix all ingredients together and season well. Broil in your oven on high for 8-10 minutes stirring occasionally. Be careful, the pan is hot!

Whisk together all ingredients and season with salt and pepper. Serve with the fajita mix on flour or corn tortillas, with salsa of choice.
If you want to try something different with your salsa here’s a neat idea! Buy your favorite store bough salsa, and cut in some fresh chopped tomatoes, corn, red onions and cilantro.
