Goat Cheese Cauliflower Mashed Potatoes

This recipe for my goat cheese cauliflower mashed potatoes are one of Heather’s favorite things that I make for her.  It only has 4 ingredients in them.  Count em….4!  Plus some salt and pepper of course.  Of course once you make the dish, you can add anything else you want on top.  See the picture below because Heather and I love bacon!  Vegetarians may want to skip out on this step!

Goat Cheese Cauliflower Mashed Potatoes

The original version of this recipe just had goat cheese, cauliflower, olive oil salt and pepper. We used to sell it at The Main Dish, and it was super popular!  I wanted to add mashed potatoes to this recipe because…..I like mashed potatoes.  To be fair, the cauliflower mash on its own is a bit thin, the fluffy potatoes make this low oxalate side dish even better.

These cauliflower mashed potatoes are so easy to make.  All it takes is steaming diced potatoes and cauliflower florets, pureeing the cauliflower with the goat cheese and olive oil and then mixing it in with the fluffy mashed potatoes.  Done, just like that!

I recommend steaming the vegetables, not boiling them.  Boiling potatoes can make them less fluffy, more gummy.  Also many of the nutrients will also leach out into the water.  That’s  not good.  Totally defeats the purpose of eating healthy veggies right??

Also remember, this dish is a great low oxalate option.  Cauliflower is definitely on the list of kidney friendly foods, plus they taste delicious!  On to the recipe!

Goat Cheese Cauliflower Mashed Potatoes

Servings: 6 people
Ingredients
  • 3 lbs white potatoes, large dice
  • 1 head cauliflower, cut into florets
  • 1/2 cup soft goat cheese
  • 1/4 cup extra virgin olive oil
  • salt and pepper to taste
Instructions
  1. Steam the potatoes and cauliflower for 20-25 minutes until soft enough to mash.

  2. Put the cauliflower into a food processor, and the mashed potatoes into a bowl.  

  3. Add the olive oil and goat cheese into the food processor and puree until smooth.

  4. Mash the potatoes until light and fluffy and add in the cauliflower goat cheese mixture.

  5. Season well with salt and pepper.  Serve with crushed up bacon bits and chives or melt some Parmesan cheese on top.  Serve

    1. Hi Laura! Miss you and Theo, hope you guys are well! You can get one of those collapsible steam baskets that goes in the bottom of your pot, or you can get double boilers with the top part perforated so the steam travels through the holes. Hope that helps! 🙂
